Bang Bang Salmon Bites are crispy, spicy, and flavorful bites of salmon coated in a creamy, spicy sauce that are perfect as an appetizer or a light meal.

- 1 lb salmon fillet, cut into bite-sized pieces
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 tablespoon olive oil
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In one bowl, place the flour seasoned with salt and pepper. In another bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.
- Dip each salmon piece first in flour, then in the egg, and finally coat with panko breadcrumbs.
- Arrange the coated salmon bites on the prepared baking sheet.
- Drizzle olive oil over the salmon bites and bake for 12-15 minutes or until golden brown and cooked through.
- In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, and garlic powder to create the Bang Bang sauce.
- Serve the salmon bites hot with the sauce on the side for dipping.

- For extra crunch, you can fry the salmon bites instead of baking.
- Adjust the spice level of the sauce by modifying the amount of sriracha.
