Description

  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon olive oil
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In one bowl, place the flour seasoned with salt and pepper. In another bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.
  3. Dip each salmon piece first in flour, then in the egg, and finally coat with panko breadcrumbs.
  4. Arrange the coated salmon bites on the prepared baking sheet.
  5. Drizzle olive oil over the salmon bites and bake for 12-15 minutes or until golden brown and cooked through.
  6. In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, and garlic powder to create the Bang Bang sauce.
  7. Serve the salmon bites hot with the sauce on the side for dipping.
