- 2 ripe bananas
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup butter
- 1 cup brown sugar
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, mash the bananas until smooth. In another bowl, mix together the flour, baking powder and salt.
- In a large bowl, beat the eggs, granulated sugar and vanilla extract until light and fluffy. Then, add the mashed bananas and mix well.
- Gradually add the flour mixture to the banana mixture, beating until smooth.
- Spread the batter evenly onto the prepared baking sheet and bake for 15-20 minutes or until golden brown.
- While the cake is baking, make the caramel filling: In a saucepan, melt the butter over medium heat. Add the brown sugar and heavy cream, stirring until the sugar has dissolved. Let the mixture boil for about 5 minutes, until it thickens into a caramel.
- Once the cake is done and still warm, spread the caramel filling evenly over the top. Then, carefully roll the cake up, starting from one of the short ends, using the parchment paper to help you.
- Let the cake cool completely before slicing and serving.
Notes
- Ensure the bananas are ripe for a richer flavor.
- The cake is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days.
- You can also add some chopped nuts or chocolate chips to the batter for extra crunch and flavor.
