- 1 lb salmon fillet, skin removed
- 1/2 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 ripe avocado
- 2 tbsp lime juice
- 1/4 cup Greek yogurt
- 1/2 tsp cayenne pepper (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a food processor, pulse the salmon until finely chopped.
- Add breadcrumbs, parmesan, parsley, egg, garlic, salt, and pepper to the salmon and mix until combined.
- Form the mixture into meatballs and place them on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes until cooked through.
- While the meatballs are baking, prepare the avocado sauce by blending avocado, lime juice, Greek yogurt, and cayenne pepper until smooth.
- Serve the meatballs warm with the avocado sauce on the side.

- For a gluten-free option, use gluten-free breadcrumbs.
- These meatballs can be frozen before baking for future meals.
