Description
A deliciously unique twist on traditional peach pie, these rice paper rolls are filled with sweet peach filling and baked to perfection.

- 8 rice paper sheets
- 2 cups fresh peaches, peeled and sliced
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1 tbsp lemon juice
- 1/4 cup granola
- Cooking spray or oil for brushing
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine sliced peaches, brown sugar, cinnamon, and lemon juice.
- Soak each rice paper sheet in warm water for about 10 seconds until soft.
- Place a spoonful of the peach mixture in the center of the rice paper sheet.
- Sprinkle a small amount of granola on top of the peach filling.
- Fold the sides of the rice paper over the filling, then roll it up tightly.
- Place the rolled rice papers on a baking sheet lined with parchment paper.
- Lightly spray or brush the rolls with cooking spray or oil.
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
- For an extra touch, serve with vanilla ice cream or whipped cream.
- Feel free to substitute peaches with other fruits like apples or berries.
- Make sure to not over-soak the rice paper to prevent tearing.
