Ingredients

  • 8 rice paper sheets
  • 2 cups fresh peaches, peeled and sliced
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/4 cup granola
  • Cooking spray or oil for brushing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine sliced peaches, brown sugar, cinnamon, and lemon juice.
  3. Soak each rice paper sheet in warm water for about 10 seconds until soft.
  4. Place a spoonful of the peach mixture in the center of the rice paper sheet.
  5. Sprinkle a small amount of granola on top of the peach filling.
  6. Fold the sides of the rice paper over the filling, then roll it up tightly.
  7. Place the rolled rice papers on a baking sheet lined with parchment paper.
  8. Lightly spray or brush the rolls with cooking spray or oil.
  9. Bake in the preheated oven for 15-20 minutes or until golden brown.
  10. Allow to cool slightly before serving.

Notes

  • For an extra touch, serve with vanilla ice cream or whipped cream.
