- 2 lbs ground beef
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 bell pepper, chopped
- 2 (15 oz) cans kidney beans, rinsed and drained
- 2 (15 oz) cans black beans, rinsed and drained
- 2 (15 oz) cans diced tomatoes with green chilies
- 1 (6 oz) can tomato paste
- 2 cups beef broth
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef over medium heat, then drain excess fat.
- Add the chopped onion, garlic, and bell pepper to the skillet and sauté until softened.
- Transfer the beef and vegetable mixture to the crockpot.
- Add the kidney beans, black beans, diced tomatoes, tomato paste, beef broth, chili powder, cumin, paprika, salt, and pepper to the crockpot.
- Stir all the ingredients together until well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot and enjoy your chili!
Notes
- For extra heat, add diced jalapeños or a dash of cayenne pepper.
- Can be made ahead of time and stored in the refrigerator for up to three days.
- Garnish with shredded cheese, sour cream, or chopped green onions if desired.
