- 12 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumbers
- 1/2 cup black olives, sliced
- 1/2 cup salami, diced
- 1/2 cup pepperoni, diced
- 1/2 cup mozzarella balls
- 1/4 cup red onion, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions; drain and set aside to cool.
- In a large bowl, combine the tomatoes, cucumbers, olives, salami, pepperoni, mozzarella, red onion, and basil.
- Add the cooled tortellini to the bowl and mix gently.
- In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- Chill in the refrigerator for at least 30 minutes before serving.
