Ingredients

  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumbers
  • 1/2 cup black olives, sliced
  • 1/2 cup salami, diced
  • 1/2 cup pepperoni, diced
  • 1/2 cup mozzarella balls
  • 1/4 cup red onion, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to package instructions; drain and set aside to cool.
  2. In a large bowl, combine the tomatoes, cucumbers, olives, salami, pepperoni, mozzarella, red onion, and basil.
  3. Add the cooled tortellini to the bowl and mix gently.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  5. Pour the dressing over the salad and toss to coat.
  6. Chill in the refrigerator for at least 30 minutes before serving.
