Description

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1/4 cup sour cream
1 teaspoon vanilla extract
1 cup fresh strawberries, sliced


Instructions

Preheat the oven to 350°F (175°C).
In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream and vanilla extract.
Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
Bake in the preheated oven for 30 minutes or until the center is almost set. Let it cool completely, then refrigerate for at least 3 hours or overnight.
Before serving, top the cheesecake with sliced fresh strawberries.
